MILAN CHICORY ( SUGAR-LOAF)

Chicory is a herbaceous annual, biennial or perennial plant that includes numerous varieties . It grows in Europe , Asia and North Africa both wild and cultivated . Wild chicory matures in dry fallow preferably clay grasslands or in limestone lands in the high mountains on the edge of the crop of potatoes and buckwheat: it is bitter , but more rich in minerals , vitamins and active ingredients , while the cultivated chicory contains smaller quantity and it's sweeter . Chicory's roots ( for decoction or infusion ) and leaves can be both used and enjoyed in salads . The best-known varieties of salad are : the common cutting , the red of Treviso , Castelfranco variety and different varieties of " endive chicory including the " curly chicory " and " chicory escarole . "

In the cabbage family are kale , kale and red, cabbage , cabbage , cabbage and cauliflower broccoli.
